Most restaurants now have chopped steaks. Some are top cuts such as prime rib. Ask the person who waits on you.
If you are cooking at home, buy "prime", not "choice" or "select".
Use meat tenderizer on the steak before cooking it. Be sure to read the directions on the tenderizer container.
We have found that medium is easier to chew than rare. We have tried it both ways and my husband finds that medium is best for chewing.
